Mini red velvet cheesecakes (Taken with instagram)

Chocolate Cupcakes:

  • 1⅓ cups all-purpose flour
  • ¼ tsp. baking soda
  • 2 tsp. baking powder
  • ¾ cup unsweetened cocoa powder
  • pinch of salt
  • 3 tbsp. butter
  • 1½ cups white sugar
  • 2 eggs
  • ¾ tsp. vanilla extract
  • 1 cup milk

♡ Preheat over to 350 degrees.
♡ Sift together flour, baking powder, baking soda, cocoa and salt. Set aside.
♡ In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla. Add the flour mixture alternately with the milk; beat well.
♡ Bake for 17-20 minutes.

Chocolate Frosting:

  • 6 ounces good semisweet chocolate
  • ½ pound unsalted butter
  • 1 extra-large egg yolk
  • 1 tsp. pure vanilla extract
  • 1¼ cups sifted confectioners’ sugar
  • 1 tbsp. instant coffee powder

♡ Chop the chocolate and place it in a heat-proof bowl set over a pan of simmering water. Stir until just melted and set aside.
♡ In the bowl of an electric mixer, beat the butter until light yellow and fluffy, around 3 minutes.
♡ Add the egg yolk and vanilla and continue beating for 3 minutes.
♡ Turn the mixer on low, gradually add the confectioners’ sugar, then beat at medium speed, until smooth and creamy.
♡ Dissolve the coffee powder in 2 teaspoons of the hottest tap water.
♡ On low speed, add the chocolate and coffee to the butter mixture and mix until blended.
